
How to stop your oven from slowing you down

Most convection or deck ovens rely on hot air and stone, which is fine, but it’s slow. You’re looking at a 300-second bake time. In a rush, that feels like an eternity. We tune these emitters to hit the moisture in the dough and the fats in the cheese. The heat sinks in instantly. Getting the balance right
To make this work, you need a lot of power in a small space. We use quartz-halogen tubes because they hit full blast in milliseconds. But there’s a catch. If you just blast the pizza with IR energy the whole time, you’ll torch the toppings before the bottom is even cooked. Nobody wants a burnt pepperoni and raw dough. We fix this by zoning the heat. You can set it up so the IR only kicks in during the last 30 seconds. It’s like a final “flash” that gives you that professional browning right at the end.
Setting it up and keeping it running
The best part? You don’t need to buy a whole new oven. We design these to drop right into your existing conveyor systems. We use PWM controllers for the wiring. It sounds technical, but all it really does is stop the tubes from burning out when things get hectic during a Friday night rush. Now, kitchens are greasy. It’s just a fact of life. Since oil splatter can cause “hot spots” on the glass and crack the tubes, we recommend using coated emitters. They hold up much better. And if one does break? It’s a quick swap.
